Chicken salad with honeycomb and vinaigrette


  • 2 grilled chicken breasts or bean curd

  • 4 cups of mixed lettuce

  • 1 cup cherry tomatoes

  • 1/2 cup shredded goat cheese

  • Melisterra honeycomb slices

  • 1/4 cup olive oil

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon Dijon mustard

  • Salt and pepper to taste


  • Make the vinaigrette. Combine the olive oil, balsamic vinegar, Dijon mustard, honeycomb, salt, and pepper in a small bowl. Whisk until well combined. Set aside.

  • Slice the grilled chicken breasts into thin strips and let cool.

  • In a large bowl, combine the chicken or bean curd with halved cherry tomatoes and lettuce.
    Add the chicken strips to the salad.

  • Sprinkle the crumbled goat cheese over the top.
    Drizzle the honeycomb vinaigrette over the salad and toss gently to coat all the ingredients.

  • For a finishing touch, garnish the salad with honeycomb pieces.
